Filet Mignon Steaks - Truly the most sought after cut from the tenderloin. Buffalo meat is sweet, coarsely textured and is similar in taste to beef with no fat marbling. It is an 8 ounce steak and, because it has no fat marbling, it will maintain its generous portion. Best prepared the same way as beef filet mignon. It should be cook to the rare or medium-rare state with an internal temperature of 125° to 130° Fahrenheit. The carry-over cooking will finish it to the appropriate temperature of 135° Fahrenheit for serving.
