Rib chops are far more attractive on the plate if the meat is nice and round next to the bone. In fact, it’s called a lollipop chop; and you achieve this effect by tying the meat.
Encircle the eye of the chop with kitchen twine. Draw it tight enough so that the meat shapes into an attractive circle but not so tight that the meat bulges up in the center. You can tie the ends of twine at any point but it is usually the easiest where the meat attaches to the bone. Doing this insures the chop will stay round during cooking. And, you get the added benefit of an evenly thick chop which reduces the chance of over-cooking.
