1/3 cup lime juice
3 tablespoons soy sauce
1 tablespoon vegetable oil
1/4 teaspoon ground red pepper
1/4 teaspoon garlic powder
1/4 teaspoon ground coriander
1/4 teaspoon cinnamon
1/4 teaspoon dried mint
1 1/2 pounds mahi-mahi fillets
Combine the first 8 ingredients in a jar; cover and shake to mix. Place fillets in a glass baking dish; pour marinade over fish. Cover and refrigerate 30 minutes to 1 hour. Broil 5 to 6 inches from heat on a greased broiler rack, turning half-way through cooking, allowing 10 minutes for each 1-inch thickness of fillets.
